Favourite Main Dishes

 

Beef Apple Balls

1 kg lean ground beef 1/4 cup minced onion
2 1/2 cups soft bread crumbs 2 teaspoon salt
2 eggs, fork beaten 1/4 cup ketchup
1 cup applesauce 1/2 cup water
   
Combine meat, crumbs, eggs, applesauce, onion and salt.  Mix very lightly.  Shape into meatballs, brown on all sides in a little fat and fry pan.  Combine ketchup and water and pour over meatballs.  Simmer 20 minutes.  Serve over cooked rice.

 

Apple Tuna Casserole

2 cups cooked salad macaroni 1/2 cup sliced black olives
2 cans chunk style tuna 2 cans cream of celery soup
2 large red apples, diced 1/2 cup milk
1/4 cup diced green pepper 1/2 cup sour cream
   
Combine cooked macaroni, tuna, apple pieces, pepper, and olives and place in casserole.  Mix together the soup, milk and sour cream and fold into the tuna mixture.  Top with buttered crumbs or crushed potato chips.  Bake at 180C for 40 minutes.  If desired, lay cheese slices on top for last 5 minutes of baking-just long enough to melt the cheese.

 

Ham 'n Apple

1 thick slice ready-to-eat ham 1/4 cup firmly packed brown sugar
3 apples, cored and cut into rings 1/2 cup apple juice
   
Slash fat on ham, and brown on both sides in frying pan.  Sprinkle lightly with cloves if desired.  Arrange apple rings on ham and sprinkle with the brown sugar.  Add apple juice to pan.  Cover and simmer for 30 minutes.

 

Pork Casserole

1 1/2 cups minute rice 1 can chicken-mushroom soup
4-6 pork chops or steaks Salt and pepper
2 apples, cored and sliced  
   
Prepare the rice ad directed on the package.  In fry pan, brown the pork chops and season as desired.  Place the prepared rice in a casserole, cover with chops or steaks, and arrange apple slices over all.  cover with a can of chicken-mushroom soup thinned with 1/2 cup water.  Bake 1 hour at 180C.

 

Baked Pork Chops

4-6 pork chops, fat removed 1/2 cup applesauce
1 packet brown gravy mix small onion, sliced
1/2 cup water  
   
Brown the onion slices with the pork chops in frying pan.  Remove and place in 20cm square pyrex or casserole dish.  In browning pan, combine gravy mix, water and applesauce.  Stir until heated and pour over chops.  Bake about in a 180C oven.
